If you've ever done layout or design you've probably used loren ipsum -- that's the dummy text used to fill in layouts, etc. Ungreek offers an alternative. At this site you can generate text from several different sources (including the US Constitution, an excerpt from the King James Bible, an excerpt from the Tao Te Ching, Immanual Kant's "Critique of Pure Reason", and, if you must, loren ipsum). A series of pulldown menus allow you to specify the length of the excerpt and a few of its characteristics.
